Ingredients

Scale

Protein

  • 1 lb chicken breast or thighs, cut into bite-sized pieces

Fruits & Vegetables

  • 1 cup fresh pineapple chunks
  • 1 bell pepper, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 green onions, sliced (for garnish)

Sauces & Oils

  • 1/3 cup teriyaki sauce
  • 2 tablespoons vegetable oil (for stir frying)

Optional Garnish

  • 1 teaspoon sesame seeds (toasted)

Instructions

  1. Prep Your Ingredients: Cut the chicken into bite-sized pieces and chop all your vegetables, including bell peppers and onions. Have your pineapple chunks, garlic, and ginger ready before starting, as stir frying moves quickly.
  2. Cook the Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through, about 5-7 minutes. Remove from the pan and set aside.
  3. Sauté Aromatics and Vegetables: In the same pan, add a bit more oil if needed. Add minced garlic and grated ginger, stirring until fragrant. Then add chopped onions and bell peppers, cooking for 3-4 minutes until softened but still crunchy.
  4. Add Pineapple and Teriyaki Sauce: Return the cooked chicken to the pan and stir in pineapple chunks. Pour teriyaki sauce over everything and stir well to coat. Let simmer for 2-3 minutes until glazed and heated through.
  5. Finish and Garnish: Sprinkle sliced green onions and, if using, toasted sesame seeds on top just before serving to add a fresh pop of color and texture.

Notes

  • Use fresh pineapple for best flavor and juiciness; frozen pineapple is acceptable if thawed and drained.
  • Cook chicken and veggies in batches if needed to avoid overcrowding the pan and ensure proper searing.
  • Taste the teriyaki sauce and adjust sweetness or saltiness as desired before adding.
  • Use high heat for quick cooking to keep vegetables crisp and chicken tender.
  • Have all ingredients prepped before cooking to maintain cooking speed and quality.
