Ingredients

Scale

Meat

  • 3 to 4 pounds beef brisket, well-marbled

Aromatics & Vegetables

  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 2 bay leaves

Liquids & Sauces

  • 1 cup red wine
  • 2 cups beef broth
  • 2 tablespoons tomato paste

Seasonings

  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons oil (vegetable or olive oil for searing)

Instructions

  1. Prepare the Brisket: Trim excess fat from the brisket, leaving enough for flavor and moisture. Pat dry and season generously with salt and pepper on all sides to enhance natural taste.
  2. Sear the Meat: Heat oil in a heavy-bottomed pot or Dutch oven over medium-high heat. Sear the brisket on each side until deeply golden-brown to lock in juices and create flavor layers.
  3. Sauté Aromatics: Remove brisket and set aside. In the same pot, sauté chopped onions, garlic, carrots, and celery until softened and fragrant, scraping up browned bits from the bottom.
  4. Deglaze and Add Liquids: Pour in red wine, scraping the pot with a wooden spoon to lift browned bits. Let wine reduce slightly, then stir in beef broth and tomato paste. Add bay leaves for herbal aroma.
  5. Braise Low and Slow: Return brisket to pot, partially submerged in liquid. Bring to gentle simmer, cover tightly, then transfer to preheated oven at 300°F (150°C). Cook for 3 to 4 hours until fork-tender.
  6. Rest and Slice: Remove brisket and let rest for 15 minutes to retain juices. Slice thinly against the grain. Meanwhile, reduce braising liquid on stovetop to thicken and serve as gravy.

Notes

  • Patience is key: slow cooking breaks down tough fibers for tender meat.
  • Don’t skip searing to add essential flavor depth.
  • Use a heavy pot like a Dutch oven for even heat distribution.
  • Season gradually and adjust as needed for balanced taste.
  • Always slice against the grain to maximize tenderness.
