Ingredients

Scale

Meatballs

  • 1 lb ground meat (beef, pork, chicken, turkey, or combination)
  • 23 garlic cloves, minced
  • 1 egg
  • 1/3 cup breadcrumbs (or gluten-free breadcrumbs)
  • 1 tablespoon oil (vegetable or olive oil)
  • Salt and pepper, to taste

Sauce

  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 garlic clove, minced
  • 12 tablespoons water

Base and Vegetables

  • 2 cups cooked rice or noodles (or cauliflower rice, quinoa for alternatives)
  • 1 cup bell peppers, sliced
  • 1 cup snap peas or broccoli florets
  • Optional: shredded carrots, cabbage, mushrooms, or spinach

Garnishes

  • 2 green onions, chopped
  • 1 tablespoon toasted sesame seeds (optional)

Instructions

  1. Prepare the meatball mixture: In a mixing bowl, combine the ground meat with minced garlic, breadcrumbs, egg, salt, and pepper. Mix gently until just combined to avoid tough meatballs.
  2. Shape and cook the meatballs: Form the mixture into evenly sized meatballs, about 1 to 1.5 inches in diameter. Heat oil in a skillet over medium heat. Cook the meatballs, turning occasionally, until golden brown and cooked through, about 8-10 minutes.
  3. Make the sweet chili garlic sauce: While meatballs cook, whisk together sweet chili sauce, soy sauce, minced garlic, and water in a small bowl. Pour over the cooked meatballs in the skillet and gently toss to coat. Simmer for 2-3 minutes until sauce thickens.
  4. Prepare the base and veggies: Cook rice or noodles according to package instructions. Meanwhile, sauté or steam bell peppers, snap peas, broccoli, or your choice of vegetables until crisp-tender.
  5. Assemble the bowls: Divide cooked rice or noodles among serving bowls. Top with sweet chili garlic meatballs and steamed vegetables. Garnish with chopped green onions and toasted sesame seeds.

Notes

  • Don’t overmix the meat to keep meatballs tender.
  • Make uniform meatballs for even cooking.
  • Use fresh garlic for best flavor.
  • Simmer the sauce gently to thicken the glaze.
  • Add sauce gradually to adjust sweetness and spice.
  • Let meatballs rest a few minutes before serving to meld flavors.
