Instructions

  1. Prepare and roast the tomatoes: Preheat your oven to 400°F (200°C). Slice the tomatoes in half and place them on a baking sheet. Toss with 3 tablespoons of extra virgin olive oil, sea salt, pepper, and whole garlic cloves. Roast for 25-30 minutes until the tomatoes are caramelized, soft, and bursting with flavor.
  2. Prepare the mozzarella and basil: While the tomatoes roast, slice the fresh mozzarella into even rounds or tear into bite-sized pieces. Wash and dry the basil leaves carefully to keep them fresh and vibrant.
  3. Assemble the salad: Arrange the roasted tomatoes on a serving dish. Evenly distribute the mozzarella and basil leaves over the top. Drizzle generously with extra virgin olive oil and balsamic glaze or vinegar for richness and acidity.
