Steak Bites

Potatoes

  • 1 lb baby Yukon Gold or red potatoes, cut into bite-sized chunks
  • 2 tbsp olive oil, divided
  • Salt and pepper, to taste

Garlic Butter Sauce

  • 3 tbsp butter
  • 3 cloves garlic, freshly minced
  • 2 tbsp fresh parsley or thyme, chopped

Instructions

  1. Prepare and par-cook the potatoes: Cut the potatoes into bite-sized chunks and boil them for about 8 minutes until just tender but not falling apart. Drain well and set aside to dry completely—this step ensures they crisp up nicely in the pan.
  2. Sear the steak bites: Heat a skillet over medium-high heat and add a little olive oil. Season the steak bites generously with salt and pepper, then sear them for 2-3 minutes per side until nicely browned but still juicy inside. Remove and set aside to rest.
  3. Crisp the potatoes: In the same skillet, add more olive oil if needed and cook the par-cooked potatoes. Fry them for 5-7 minutes, turning occasionally, until they develop a crispy golden-brown crust all over.
  4. Make the garlic butter sauce: Reduce the heat to medium-low and add butter and minced garlic to the skillet. Stir gently, cooking until the garlic is fragrant but not burnt, about 1 minute. Toss the steak bites and potatoes back in to coat them thoroughly with the garlic butter.
  5. Finish with fresh herbs and serve: Sprinkle chopped fresh parsley or thyme over the skillet and give everything a final toss. Serve immediately for the best flavor and texture.
