This comforting yet elegant recipe combines simple ingredients and quick preparation, making it perfect for busy weeknights or special dinners.

Ingredients

Scale

Chicken and Seasoning

  • 4 skinless, boneless chicken breasts
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon Italian seasoning

For Cooking

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (preferably oil-packed)

For the Sauce

  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups fresh baby spinach leaves

Optional Garnishes and Seasoning

  • Fresh parsley or basil, chopped (for garnish)
  • Additional grated Parmesan (for serving)
  • Red pepper flakes or cayenne (optional, for a spicy kick)

Instructions

  1. Prepare the Chicken: Season the chicken breasts generously with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium-high heat and cook the chicken for about 5-6 minutes per side, until golden brown and cooked through. Remove from pan and set aside to keep warm.
  2. Sauté Garlic and Sun-Dried Tomatoes: In the same skillet, add a little more olive oil if needed, then add minced garlic and chopped sun-dried tomatoes. Sauté for 1-2 minutes until garlic is fragrant and tomatoes soften, stirring frequently to prevent burning.
  3. Create the Creamy Parmesan Sauce: Pour the heavy cream into the skillet, stirring constantly. Lower heat to medium and sprinkle in grated Parmesan cheese. Stir continuously to melt the cheese and thicken the sauce, preventing sticking or clumping.
  4. Add Spinach and Combine: Once the sauce begins to thicken, add the fresh spinach leaves. Cook for 2-3 minutes, stirring gently until the spinach wilts and incorporates into the sauce while preserving its vibrant green color.
  5. Return Chicken and Finish Cooking: Place the cooked chicken breasts back into the skillet, spooning the creamy Parmesan sauce over the top. Simmer together for another 2-3 minutes to meld flavors and reheat the chicken thoroughly.

Notes

  • Pat chicken dry before cooking to ensure a golden crust and prevent steaming.
  • Keep the sauce on low to medium heat to avoid curdling and maintain a silky texture.
  • Use freshly grated Parmesan cheese for better melting and a sharper flavor.
  • Opt for sun-dried tomatoes packed in oil for a richer taste compared to dry-packed ones.
  • If the sauce becomes too thick, thin it out with a splash of chicken broth or milk before serving.
