Chicken Scarpariello Recipe

Chicken Scarpariello Recipe

Chicken Scarpariello is a quick and hearty Italian-American dish combining savory chicken with bold flavors of garlic, white wine vinegar, hot peppers, and Italian herbs. This one-pan recipe balances tangy, spicy, and savory notes and is perfect for a flavorful weeknight meal ready in under 30 minutes.

Ingredients

Scale

Chicken

  • 4 chicken thighs or breasts (bone-in for juiciness, boneless for leaner option)

Flavor Base

  • 4 garlic cloves, minced
  • 23 Italian hot peppers, sliced (adjust to taste)

Liquids & Seasonings

  • 1/4 cup white wine vinegar
  • 1/2 cup chicken broth (gluten-free if needed)
  • 2 tsp dried Italian herbs (oregano, thyme, rosemary)
  • 2 tbsp olive oil (for sautéing)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the Chicken: Pat chicken pieces dry and season generously with salt, pepper, and dried Italian herbs to ensure every bite bursts with flavor before cooking.
  2. Brown the Chicken: Heat olive oil in a large skillet over medium-high heat, then add the chicken skin side down. Cook until golden brown on both sides, about 4-5 minutes per side. Remove and set aside.
  3. Sauté Garlic and Peppers: Using the same skillet, add a bit more olive oil if needed, then sauté minced garlic and sliced hot peppers until fragrant and softened, about 1-2 minutes.
  4. Deglaze and Simmer: Pour in white wine vinegar and chicken broth to deglaze the pan, scraping up browned bits from the bottom. Bring to a simmer and return the chicken to the skillet, spooning the sauce over it.
  5. Finish Cooking: Lower the heat, cover, and cook for 8-10 minutes until the chicken is fully cooked and the sauce has thickened slightly. Adjust seasoning as needed.

Notes

  • Use bone-in chicken thighs or drumsticks for juicier meat and more flavor.
  • Don’t skip browning the chicken—it locks in flavor and adds color.
  • Adjust spice level by varying the amount and type of peppers.
  • White wine vinegar is preferred, but apple cider vinegar adds a fruity twist.
  • Allow the cooked chicken to rest for a few minutes to let juices redistribute.
