Ingredients

Instructions

  1. Prepare the Crust: Crush Biscoff cookies into fine crumbs using a food processor or place them in a zip-top bag and pound with a rolling pin. Mix the crumbs thoroughly with melted butter until the mixture holds together when pressed. Firmly press this mixture into the bottom of a springform pan to form an even crust. Chill the crust in the refrigerator while preparing the filling.
  2. Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese until smooth and creamy. Add powdered sugar and vanilla extract, mixing until fully incorporated. Gently fold in the Biscoff spread to infuse the filling with its signature caramelized spice flavor. In a separate bowl, whip the heavy cream to soft peaks, then carefully fold it into the cream cheese mixture to maintain a light and airy texture.
