Instructions

  1. Bake the Potatoes: Preheat your oven to 400°F (200°C). Scrub the russet potatoes clean, prick them with a fork a few times, and bake directly on the oven rack for 45-60 minutes until tender when pierced with a fork.
  2. Prepare the Chicken Mixture: While the potatoes bake, shred cooked chicken into small pieces. In a large mixing bowl, combine the shredded chicken, cream cheese, sour cream, cheddar cheese, crispy bacon, green onions, garlic powder, onion powder, salt, and pepper. Mix well until evenly incorporated.
  3. Scoop Out Potatoes and Mix: Once the potatoes are baked and cool enough to handle, slice them in half lengthwise. Carefully scoop out most of the insides into the chicken mixture bowl, leaving a thin layer of potato to keep the skin intact. Stir to combine the potato with the creamy chicken mixture.
  4. Stuff the Potatoes: Spoon the chicken and potato mixture back into the potato skins, packing each half generously. Place the stuffed potatoes on a baking sheet for the final melt.
  5. Bake and Melt: Return the stuffed potatoes to the oven and bake for another 15-20 minutes, or until the cheese is melted and bubbly on top. Optionally, broil for 1-2 minutes at the end for a golden finish, watching carefully.
