  • 100ml Heavy Cream

Instructions

  1. Prepare the Coffee Mixture: Brew a strong shot of espresso or coffee and let it cool slightly. If desired, stir in rum or coffee liqueur to enhance the flavor.
  2. Crush the Cookies: Gently crush ladyfinger cookies or biscotti into fine crumbs using a food processor or by hand inside a sealed bag; aim for a sandy texture that blends well.
  3. Whip the Cream: In a clean bowl, whip heavy cream until soft peaks form to give your truffles a light and airy consistency.
  4. Combine Mascarpone and Sugar: Mix mascarpone cheese with powdered sugar until smooth and creamy, then carefully fold in the whipped cream to keep the mixture light.
  5. Mix in Coffee and Cookies: Add the espresso mixture and crushed cookies into the mascarpone cream and gently fold until fully combined, forming a thick, moldable batter.
  6. Shape the Truffles: Using a spoon or small cookie scoop, form the mixture into small balls about one inch in diameter and place them on a parchment-lined tray.
  7. Chill and Coat: Refrigerate the formed truffles for at least one hour to firm up. Once set, dust lightly with cocoa powder or dip in melted chocolate and allow to set again.
