Ingredients

Scale

Filling

  • 2 cups cooked turkey, shredded or chopped
  • 1 to 1 1/2 cups classic bread stuffing
  • 2 to 3 tablespoons gravy or broth
  • 1/2 cup shredded cheese (optional)
  • 2 tablespoons sautéed onions, celery, or carrots (optional)
  • 1 teaspoon fresh sage, thyme, or rosemary, chopped

For Assembly and Frying

  • 10 to 12 egg roll wrappers
  • Water or beaten egg, for sealing
  • 2 inches vegetable or canola oil, for frying

Instructions

  1. Prepare the Filling: In a medium bowl, combine the shredded turkey, stuffing, and any optional sautéed vegetables. Add 2 to 3 tablespoons of gravy or broth to moisten the mixture slightly, then stir in fresh chopped herbs and cheese if using. Mix well to evenly distribute flavors.
  2. Assemble the Egg Rolls: Lay an egg roll wrapper flat on a clean surface with one corner pointing toward you, forming a diamond shape. Spoon about two tablespoons of the filling near the corner closest to you. Fold that corner over the filling, tuck in the sides tightly, and roll up gently. Seal the edge with a dab of water or beaten egg to keep it closed during frying.
  3. Fry Until Golden and Crispy: Heat 2 inches of vegetable or canola oil in a deep skillet over medium-high heat to approximately 350°F. Carefully place egg rolls in the hot oil in batches, frying for 2 to 3 minutes per side or until they turn golden brown and crispy. Remove with a slotted spoon and let drain on paper towels to remove excess oil.
  4. Serve Warm: Serve the egg rolls immediately while hot and crispy. Pair with your favorite dipping sauces such as cranberry sauce, ranch dressing, or spicy aioli for enhanced flavor.

Notes

  • Don’t overfill the egg rolls to prevent bursting during frying.
  • Seal edges properly using water or egg wash to keep wrappers closed.
  • Maintain oil temperature around 350°F for even cooking and to avoid greasy egg rolls.
  • Pat filling dry to reduce excess moisture and prevent soggy wrappers.
  • Make the filling and assemble egg rolls ahead of time for quick frying before serving.
