Instructions

  1. Prepare the bread mixture: Cube day-old bread into small pieces. In a skillet, sauté chopped onions and celery in 2 tablespoons of butter over medium heat until soft and fragrant, about 5 minutes. In a large bowl, combine the bread cubes, sautéed vegetables, fresh herbs, beaten eggs, broth, and any optional extras you choose. Mix gently until the bread absorbs the liquid and the mixture holds together when pressed.
  2. Form the balls: Using your hands or a small cookie scoop, scoop a handful of the stuffing mixture and roll it between your palms to form compact, bite-sized balls. If the mixture is too dry, add more broth a tablespoon at a time; if too wet, sprinkle in extra breadcrumbs or bread cubes.
  3. Bake until golden: Preheat the oven to 350°F (175°C). Place stuffing balls on a greased baking sheet. Brush the tops lightly with melted butter. Bake for 20-25 minutes or until the outsides are crisp and golden brown.
