Ingredients

Scale

Main Ingredients

  • 1 lb smoked sausage, sliced into rounds or half-moons
  • 2 lbs Yukon Gold or red potatoes, washed and chopped into bite-sized pieces
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 1 cup heavy cream or sour cream
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika

Optional Garnishes

  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh chives, chopped

Instructions

  1. Prepare Ingredients: Wash and chop potatoes into bite-sized pieces to ensure even cooking. Slice smoked sausage into rounds or half-moons as preferred. Dice the onion and bell peppers finely for flavor distribution.
  2. Preheat Oven and Cook Aromatics: Preheat oven to 375°F (190°C). In a large skillet, sauté diced onions and minced garlic in a little oil over medium heat until softened and fragrant. Add bell peppers last and cook just until slightly tender.
  3. Combine Ingredients in Casserole Dish: In a large mixing bowl, toss raw potatoes, sautéed vegetables, and smoked sausage pieces together. Pour in the heavy cream or sour cream, sprinkle with salt, pepper, and smoked paprika, then gently mix to coat everything evenly.
  4. Add Cheese and Bake: Transfer mixture to a greased casserole dish and top with shredded cheese. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 15 minutes until cheese is bubbly and golden, and potatoes are tender when pierced with a fork.
  5. Garnish and Serve: After baking, sprinkle with freshly chopped parsley or chives for a touch of color and freshness. Allow casserole to cool slightly before serving to improve texture and flavor.

Notes

  • Use high-quality smoked sausage for authentic flavor and texture.
  • Cut potatoes uniformly to ensure they cook evenly.
  • For faster baking, parboil potatoes for 5 minutes before assembling.
  • Use a casserole dish large enough to spread ingredients for better roasting.
  • Let casserole rest 5-10 minutes after baking to set and improve slicing.
