Instructions

  1. Prepare the Mushrooms: Melt butter in a skillet over medium heat. Add minced garlic and cremini mushrooms, then sauté until the mushrooms are golden brown and fragrant. Set aside to add later.
  2. Season and Sear the Beef: Season the beef pieces generously with salt, pepper, onion powder, and paprika. In the same skillet, quickly sear the beef on all sides to lock in juices and develop color. Transfer the beef to the slow cooker.
  3. Build the Slow Cooker Base: Pour beef broth over the seared beef in the slow cooker. Stir gently, cover, and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the beef is tender and falls apart.
  4. Thicken the Sauce: About 30 minutes before serving, remove a small amount of cooking liquid from the slow cooker. Mix it with flour or cornstarch to create a slurry. Stir the slurry back into the slow cooker along with the sautéed garlic butter mushrooms and sour cream. Gently mix until smooth and creamy.
  5. Final Touches: Cook uncovered for the last 30 minutes to thicken the sauce further. Just before serving, sprinkle chopped fresh parsley for color and freshness.
