  • 2 tablespoons Worcestershire sauce

  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Beef: Pat the chuck roast dry with paper towels and season generously with salt and pepper. Optionally, sear the meat in a hot pan on all sides until browned to lock in juices and add a caramelized crust.
  2. Assemble Vegetables: Peel and cut carrots, potatoes, and onions into large, even chunks. Slightly smash garlic cloves. Arrange all vegetables in the bottom of the slow cooker to form a flavorful base.
  3. Combine Ingredients in Slow Cooker: Place the seared chuck roast on top of the vegetables. Pour beef broth and Worcestershire sauce evenly over the roast and veggies. Tuck fresh rosemary and thyme sprigs around the meat. Cover the slow cooker and set to low.
  4. Slow Cook to Perfection: Cook on low for 8 to 10 hours to allow the beef to become fork-tender and flavors to meld deeply. Alternatively, cook on medium for 4 to 6 hours if pressed for time.
  5. Final Touches: Carefully remove the roast and vegetables from the slow cooker. Skim off excess fat from the broth and adjust seasoning with additional salt and pepper if necessary. Slice the meat against the grain and serve hot with the vegetables and ladled broth.
