Ingredients

Seafood & Vegetables

  • Fresh peeled and deveined shrimp – 1 pound (about 450 g)
  • Fresh thin asparagus stalks – 1 bunch (about 1 pound / 450 g)

Seasonings & Flavorings

  • Garlic cloves, minced – 2 to 3 cloves
  • Lemon juice – 2 tablespoons (freshly squeezed)
  • Lemon zest – 1 teaspoon (freshly grated)
  • Olive oil – 2 tablespoons
  • Salt – 1/2 teaspoon or to taste
  • Black pepper – 1/4 teaspoon or to taste
  • Fresh herbs (parsley or dill), chopped – 2 tablespoons
  • Red pepper flakes (optional) – 1/4 teaspoon

Instructions

  1. Prep the Ingredients: Rinse and trim the asparagus stalks, then pat the shrimp dry thoroughly. Mince the garlic cloves, zest the lemon, and chop the fresh herbs so everything is ready to assemble.
  2. Assemble the Foil Packets: Lay out large sheets of aluminum foil. Evenly distribute the asparagus and shrimp among the foil sheets. Sprinkle minced garlic, lemon zest, and fresh herbs over the ingredients. Drizzle olive oil and freshly squeezed lemon juice on top, then season with salt, black pepper, and red pepper flakes if using.
  3. Seal the Packets: Fold the foil over the ingredients and tightly seal the edges, creating packets that will trap steam and infuse the flavors during cooking.
  4. Cook: Place the foil packets on a preheated grill or in an oven set to 400°F (200°C). Cook for 12 to 15 minutes, or until the shrimp turn pink and opaque and asparagus is tender-crisp.
  5. Serve and Enjoy: Carefully open each foil packet to release steam and serve immediately with your favorite sides or garnishes.

Notes

  • Don’t overcook the shrimp, as they cook quickly and become rubbery if left too long.
  • Use fresh shrimp and crisp asparagus rather than frozen for the best flavor and texture.
  • Double-layer the foil to prevent leaks and keep the juices inside the packet.
  • Adjust lemon, garlic, and herbs seasoning to your personal taste preference.
  • Let the packets rest unopened for a few minutes after cooking to allow flavors to meld together.
