Ingredients

Scale

Chicken

  • 1 lb boneless, skinless chicken thighs or breasts

Glaze

  • 12 Scotch bonnet peppers (fresh or frozen), adjust to taste
  • 3 tablespoons honey
  • 2 cloves garlic
  • 1/4 cup diced onion
  • 2 tablespoons fresh lime juice
  • 2 tablespoons soy sauce (use gluten-free if needed)
  • 2 tablespoons olive oil, plus extra for cooking

Garnish (Optional)

  • Fresh cilantro or parsley, chopped
  • Lime wedges

Instructions

  1. Prepare the Chicken: Pat the chicken dry with paper towels to ensure it browns well. If using large pieces, cut them into smaller, even-sized pieces for consistent cooking.
  2. Make the Scotch Bonnet Glaze: Combine Scotch bonnet peppers, honey, garlic, onion, lime juice, soy sauce, and olive oil in a blender or food processor. Blend until smooth to form a vibrant sweet and spicy glaze.
  3. Cook the Chicken: Heat a skillet over medium-high heat and add olive oil. When hot, add the chicken pieces and cook for 4-5 minutes on each side until golden brown and nearly cooked through.
  4. Add the Glaze: Pour the prepared glaze over the chicken in the skillet, turning the pieces to coat evenly. Reduce the heat to medium and cook for 3-5 minutes until the glaze thickens and becomes sticky.
  5. Finish and Serve: Remove chicken from heat, let rest for a couple of minutes. Garnish with chopped cilantro or parsley and serve with lime wedges if desired.

Notes

  • Balance the Heat: Start with one Scotch bonnet pepper and adjust to your spice tolerance.
  • Marinate Early: For deeper flavor, marinate chicken in the glaze for 30 minutes before cooking.
  • Use Thighs for Juiciness: Thighs remain moist and tender when cooked at high heat.
  • Don’t Overcrowd the Pan: Ensure even searing and glaze caramelization.
  • Fresh Lime Juice is Essential: Adds brightness that balances the glaze’s sweetness and heat.
