Instructions

  1. Caramelize the Onions: Thinly slice the onions and cook slowly in a pan with oil over low heat for 25–30 minutes until golden brown and sweetly fragrant, developing deep, savory-sweet flavor.
  2. Prepare the Sausage Filling: Remove sausage meat from casings if necessary, then combine with caramelized onions, minced garlic, fresh thyme, salt, and pepper. Mix thoroughly to ensure even flavor distribution.
  3. Assemble the Rolls: On a lightly floured surface, roll out puff pastry sheets and cut into rectangles. Place a generous amount of the sausage and onion filling on each, brush pastry edges with egg wash, then fold and seal thoroughly to prevent leaks.
