Sauerkraut Casserole

Sauerkraut Casserole is a comforting and tangy baked dish that combines the distinctive flavor of sauerkraut with ground meat, creamy elements, and a base of potatoes or noodles. This hearty casserole is perfect for quick, flavorful dinners or family gatherings, offering a satisfying balance of sour, savory, and creamy textures.

Ingredients

Scale

Main Ingredients

  • 2 cups sauerkraut, drained
  • 1 lb ground meat (beef, pork, or turkey)
  • 1 medium onion, finely chopped
  • 3 cups cooked potatoes or noodles
  • 1 cup sour cream or cream cheese
  • 1 cup shredded cheese (mozzarella, Swiss, cheddar, or preferred)
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 teaspoon paprika

Optional Ingredients

  • 1 cup chopped fresh cabbage (for extra texture and freshness)
  • Jalapeños or hot sauce (for a spicy kick)
  • Smoked sausage or bacon (for smoky variation)
  • Mushrooms or lentils (for vegetarian twist)

Instructions

  1. Prepare the Ingredients: Drain excess liquid thoroughly from the sauerkraut to prevent sogginess. Finely chop the onions and prepare your choice of ground meat or meat alternative.
  2. Cook the Meat and Onions: In a large skillet over medium heat, sauté the onions until translucent. Add the ground meat and cook until browned, seasoning lightly with salt, pepper, and paprika to develop a robust flavor base.
  3. Mix in Sauerkraut and Creaminess: Stir the drained sauerkraut into the cooked meat mixture, then fold in sour cream or cream cheese to add creaminess and meld all flavors together.
  4. Assemble the Casserole: Grease a casserole dish and layer the cooked potatoes or noodles at the bottom. Pour the sauerkraut and meat mixture evenly over the base. Sprinkle your chosen cheese over the top for a golden finish.
  5. Bake Until Golden and Bubbling: Preheat the oven to 350°F (175°C). Bake the casserole for 25–30 minutes or until the cheese is melted, golden, and bubbling along the edges.

Notes

  • Drain sauerkraut thoroughly to avoid watery casserole layers.
  • Use fresh onions and quality meat to enhance flavor depth.
  • Undercook meat slightly before baking to maintain juiciness.
  • Choose cheese that melts well for the best texture.
  • Let the casserole rest for a few minutes after baking for cleaner slicing.
