Instructions

  1. Prep the cauliflower: Wash the cauliflower thoroughly and cut it into bite-sized florets. Pat them completely dry with a towel to ensure they roast properly without steaming.
  2. Roast the cauliflower: Toss the florets with olive oil, salt, and pepper until evenly coated. Arrange them in a single layer on a baking sheet. Roast in a preheated oven at 425°F (220°C) for 25-30 minutes, turning halfway through, until golden brown and tender.
  3. Make the garlic herb gravy: While the cauliflower roasts, heat olive oil or vegan butter in a small pan over medium heat. Sauté the minced garlic until fragrant.
