Ingredients

Scale

Crust

  • 1 store-bought or homemade pie crust

Filling

  • 1 ½ cups fresh spinach, washed and chopped
  • 1 cup ricotta cheese
  • 3 large eggs, room temperature
  • ½ cup grated Parmesan cheese
  • 1 garlic clove, minced
  • ¼ teaspoon nutmeg
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil or butter

Instructions

  1. Prepare the Spinach: Start by washing fresh spinach thoroughly, then sauté it lightly in olive oil or butter with minced garlic until wilted and fragrant. Allow it to cool and gently squeeze out any excess moisture to avoid a soggy quiche filling.
  2. Make the Custard Base: In a mixing bowl, whisk together eggs, ricotta cheese, grated Parmesan, a pinch of nutmeg, salt, and freshly ground pepper until smooth and creamy. This blend will give the quiche its luscious texture.
  3. Assemble the Quiche: Roll out your pie crust in a quiche or pie pan, pressing it evenly into place. Spread the cooled spinach evenly on the crust before pouring the ricotta and egg mixture over the top, ensuring it settles nicely.
  4. Bake to Perfection: Preheat your oven to 350°F (175°C) and bake the quiche for 35 to 40 minutes or until the center is set and the top turns a beautiful golden brown.
  5. Cool and Serve: Let the quiche rest for at least 10 minutes before slicing to allow the filling to firm up, making it easier to cut and enjoy.

Notes

  • Drain Spinach Well: Removing extra moisture prevents a watery quiche and keeps the crust crisp.
  • Room Temperature Eggs: Use eggs at room temperature so they blend smoothly with ricotta.
  • Blind Bake the Crust: Partially pre-bake the crust to avoid sogginess from the wet filling.
  • Don’t Overmix: Gently fold ingredients to retain a light and tender texture in the final quiche.
  • Check Doneness: Insert a knife; if it comes out clean, the quiche is ready.
  • Customize with Herbs: Fresh herbs added to the custard elevate flavor complexity perfectly.
