Reuben Crescent Bake

Reuben Crescent Bake

Reuben Crescent Bake is a comforting and flavorful baked dish that combines all the classic elements of a Reuben sandwich—tender corned beef, tangy sauerkraut, melted Swiss cheese, and creamy Thousand Island dressing—wrapped inside flaky crescent roll dough. Perfect for any meal or occasion, this easy-to-make bake delivers the timeless Reuben taste with minimal effort and maximum satisfaction.

Ingredients

Main Ingredients

  • Corned beef, thinly sliced or chopped – 8 oz
  • Sauerkraut, drained and squeezed – 1 cup
  • Swiss cheese, shredded – 1 cup
  • Thousand Island dressing – 1/4 cup
  • Crescent roll dough (store-bought) – 1 can (8 oz)
  • Butter or oil for brushing – 1 tbsp melted butter

Instructions

  1. Prepare the Ingredients: Drain the sauerkraut thoroughly to remove excess moisture to avoid sogginess. Chop corned beef into bite-sized pieces and shred the Swiss cheese if not pre-shredded. Have the Thousand Island dressing ready and preheat the oven to 375°F (190°C).
  2. Assemble the Crescent Bake: Unroll the crescent dough onto a parchment-lined baking sheet. Gently press along perforations to seal them into one solid dough sheet. Spread a thin, even layer of Thousand Island dressing over the dough. Distribute the corned beef evenly on top, followed by the sauerkraut. Sprinkle the shredded Swiss cheese generously over the entire surface.
  3. Roll and Seal: Starting from one edge, carefully roll the dough with the filling into a tight log or crescent shape. Pinch the edges firmly to seal and prevent the filling from leaking during baking.
  4. Brush and Bake: Brush the top of the rolled dough with melted butter to promote browning and crispness. Bake in the preheated oven for 20-25 minutes or until the crust is golden brown and cheese is bubbly.
  5. Cool and Slice: Remove the bake from the oven and allow it to cool for a few minutes. This resting period helps the filling set, making slicing and serving easier.

Notes

  • Dry the sauerkraut well to avoid soggy crust.
  • Do not overfill the dough to prevent tearing.
  • Use high-quality corned beef and Swiss cheese for best flavor.
  • Seal dough edges tightly to keep filling inside while baking.
  • If crust browns too quickly, reduce oven temperature slightly.
