Mascarpone Mixture

  • 1 cup mascarpone cheese

  • 1/2 cup heavy whipped cream

Ladyfingers and Coffee

  • 24 ladyfingers
  • 1 1/2 cups strong espresso or coffee, cooled to room temperature

Garnish

  • Cocoa powder, for dusting
  • Optional: freshly grated nutmeg, cinnamon, or toasted pumpkin seeds

Instructions

  1. Prepare the Pumpkin Mascarpone Cream: In a mixing bowl, whisk together the egg yolks and sugar until creamy and pale. Gently fold in the mascarpone cheese, pumpkin puree, pumpkin pie spice, and vanilla extract until smooth and evenly combined. Finally, fold in the whipped cream to lighten the mixture.
  2. Brew and Cool the Espresso: Brew strong espresso or coffee and allow it to cool to room temperature to prevent over-soaking the ladyfingers.
  3. Dip the Ladyfingers: Quickly dip each ladyfinger into the cooled espresso, just long enough to soak without becoming soggy, and arrange a single layer at the bottom of your serving dish.
  4. Layer the Cream and Ladyfingers: Spread half of the pumpkin mascarpone mixture evenly over the soaked ladyfingers. Add a second layer of dipped ladyfingers on top, then finish by spreading the remaining mascarpone cream smoothly over the top.
  5. Chill for Flavor Development: Refrigerate the assembled tiramisu for at least 4 hours or preferably overnight to allow the flavors to meld and the cream to set perfectly.
  6. Add the Finishing Touch: Just before serving, dust the top generously with cocoa powder. Optionally, garnish with freshly grated nutmeg, a sprinkle of cinnamon, or toasted pumpkin seeds for extra texture and flavor.

Notes

  • Use fresh pumpkin puree, if possible, for a richer flavor and creamier texture.
  • Do not over-soak the ladyfingers; a quick dip is enough to keep them tender but intact.
  • Chill the tiramisu overnight for best flavor fusion and texture.
