Ingredients

Scale

Wet Ingredients

  • 3 ripe bananas, mashed
  • 2 large eggs
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 1/2 cups whole wheat flour
  • 1/2 cup protein powder (unflavored or vanilla)
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Prepare Your Ingredients: Preheat your oven to 350°F (175°C) and grease a loaf pan. Mash the ripe bananas thoroughly to create a smooth base, then set aside.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together the eggs, Greek yogurt, honey or maple syrup, and vanilla extract until combined and slightly frothy.
  3. Combine Dry Ingredients: In a separate bowl, sift together whole wheat flour, protein powder, baking soda, cinnamon, and a pinch of salt to ensure even distribution of leavening agents.
  4. Bring Wet and Dry Mixtures Together: Gently fold the dry ingredients into the wet mixture, then carefully incorporate the mashed bananas. Stir just until the batter comes together, avoiding overmixing to keep the bread tender.
  5. Bake Until Golden: Pour the batter into the prepared loaf pan and bake for 50–60 minutes. Check readiness by inserting a skewer or toothpick into the center; it should come out clean or with a few moist crumbs.
  6. Cool and Slice: Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack. This step prevents sogginess and ensures perfect slices.

Notes

  • Choose ripe bananas for the sweetest, most flavorful bread.
  • Don’t overmix the batter to maintain a soft, tender crumb.
  • Use unflavored or vanilla protein powder to complement the banana flavor.
  • Check oven temperature with a thermometer for even baking.
  • Test doneness with a toothpick at 50 minutes to avoid overbaking and dryness.
