Ingredients

Scale

Meat and Vegetables

  • 1 lb thinly sliced ribeye or sirloin beef
  • 1 cup sliced bell peppers
  • 1 cup sliced onions

Pasta

  • 12 oz penne or rigatoni pasta

Cheese

  • 1 cup shredded provolone cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Sauce and Seasonings

  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 teaspoon smoked paprika
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Ingredients: Slice the beef thinly and chop the bell peppers and onions into strips. Cook the pasta according to package instructions until al dente, then drain and set aside.
  2. Sauté the Vegetables and Beef: Heat a skillet over medium-high heat and cook the bell peppers and onions until soft and slightly caramelized. Remove from the pan. In the same skillet, quickly sear the thin beef slices, seasoning with salt, pepper, and smoked paprika.
  3. Make the Creamy Sauce: In the same skillet, add minced garlic and cook briefly. Stir in the beef broth and heavy cream, letting it simmer until slightly thickened. Stir in half of the shredded cheese until melted and smooth.
  4. Combine Everything: Return the cooked vegetables and beef to the sauce and mix well. Toss this savory mixture with the cooked pasta to coat every piece with the creamy sauce.
  5. Assemble and Bake: Transfer the mixture into a baking dish, sprinkle the remaining cheese on top, and bake at 375°F (190°C) for 15-20 minutes until the cheese is bubbly and golden.

Notes

  • Use quality beef like ribeye or sirloin for best flavor and tenderness.
  • Do not overcook the pasta; keep it al dente to prevent mushiness after baking.
  • Sauté vegetables until caramelized for natural sweetness that balances the dish.
  • Combine mozzarella and provolone cheese for the ideal melt and flavor.
  • Allow the bake to rest for 5 minutes before serving to set and make slicing easier.
