Ingredients

Fruit Ingredients

  • Fresh peaches – ripe and juicy, peeled and finely chopped (about 1 cup)
  • Peach butter or preserves – 2 tablespoons

Dry Ingredients

  • All-purpose flour – 2 cups
  • Baking powder – 1 tablespoon
  • Granulated sugar – 2 tablespoons
  • Salt – 1/2 teaspoon

Fat and Liquid

  • Cold butter – 1/2 cup (1 stick), cut into small pieces
  • Milk or buttermilk – 3/4 cup (adjust as needed)

Instructions

  1. Prepare Your Ingredients: Chill the butter and sift together the flour, baking powder, sugar, and salt in a large bowl. Peel and finely chop the fresh peaches, then set aside your peach butter.
  2. Cut in the Butter: Using a pastry cutter or your fingers, cut the cold butter into the flour mixture until it resembles coarse crumbs, ensuring flaky biscuit layers.
  3. Mix in the Peaches: Gently fold the chopped peaches into the crumb mixture, being careful not to break them down too much to preserve texture.
  4. Add Liquid and Form Dough: Pour in the milk or buttermilk and stir just until the dough comes together—avoid overmixing to keep biscuits tender.
  5. Shape and Bake: Turn the dough onto a floured surface, gently pat to about 1-inch thickness, and cut into rounds. Arrange on a baking sheet and dollop peach butter on top or swirl it into the dough before baking at 425°F (220°C) for 12–15 minutes, until golden and fragrant.

Notes

  • Keep butter cold to create flaky biscuit layers.
  • Do not overmix the dough to avoid tough biscuits.
  • Use ripe peaches for the best natural sweetness and juicy texture.
  • Preheat your oven to ensure proper rise and golden crust.
  • Try brushing warm biscuits with honey or melted butter for extra flavor.
  • To freeze, place unbaked biscuit rounds on a baking sheet, then transfer to a freezer-safe bag for up to three months.
  • Reheat biscuits in a 350°F (175°C) oven for 5 to 7 minutes to restore texture and warmth.
