Ingredients

Scale

Chicken

  • 2 boneless chicken breasts or thighs

Pasta

  • 8 ounces spaghetti noodles, cooked al dente

Dairy & Sauce

  • 1 cup shredded Monterey Jack cheese (plus extra for topping)
  • 1 cup sour cream
  • 1 can (10.5 oz) condensed cream of mushroom or chicken soup
  • 2 tablespoons butter
  • 1/4 cup milk

Seasonings & Extras

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1/4 cup chopped green chilies or jalapeños (optional)

Instructions

  1. Cook the Spaghetti: Boil spaghetti noodles in salted water for about 8 minutes until just al dente. Drain and set aside to cool slightly before mixing into the sauce.
  2. Prepare the Chicken: In a skillet over medium heat, cook chicken breasts or thighs for 6-8 minutes per side until no longer pink inside. Let cool, then shred into bite-sized pieces using two forks.
  3. Make the Cheese Sauce: In a large mixing bowl, combine sour cream, condensed cream of mushroom or chicken soup, shredded Monterey Jack cheese, garlic powder, onion powder, salt, and pepper. Stir thoroughly until smooth and creamy.
  4. Combine Ingredients: Add the cooked spaghetti and shredded chicken to the cheese sauce mixture. If using, fold in the chopped green chilies or jalapeños for added flavor and a mild spicy kick.
  5. Assemble and Bake: Transfer the combined mixture into a greased baking dish. Sprinkle extra shredded Monterey Jack cheese evenly on top. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes until the cheese on top is melted and slightly browned.

Notes

  • Use freshly shredded Monterey Jack cheese for better melt and texture.
  • Avoid overcooking the pasta to prevent mushiness after baking.
  • Allow the casserole to rest for 5 minutes after baking to set properly.
  • Adjust the amount of green chilies or jalapeños to customize the spice level.
  • Consider mixing Monterey Jack with cheddar or mozzarella cheese to enhance flavor and meltiness.
