  • 1/4 teaspoon ground allspice
  • 1 tablespoon lemon juice
  • Pinch of salt
  • 1 tablespoon butter, cut into small pieces

Instructions

  1. Prepare the Apple Filling: Peel, core, and slice the apples into small, even pieces. In a bowl, toss the apple slices with white sugar, brown sugar, cinnamon, nutmeg, allspice, lemon juice, and a pinch of salt. Let the mixture sit while preparing the crust to allow the flavors to meld.
  2. Roll Out the Pie Dough: On a floured surface, roll your pie crust dough to about 1/8 inch thickness. Use a round cutter or glass to cut out circles slightly larger than your mini pie tins or muffin cups.
  3. Assemble the Mini Pies: Place each dough circle into the mini pie tin, gently pressing down the edges. Spoon the apple filling into each crust, leaving some space on top. Dot small pieces of butter over the filling for added richness.
  4. Top and Seal: Cover the filling with another dough circle or create a lattice pattern on top. Press the edges firmly to seal, trim any excess dough, and cut a few shallow slits in the top crust to allow steam to escape during baking.
  5. Apply Egg Wash and Bake: Brush each mini pie with beaten egg for a golden and glossy finish. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes or until the crust is golden brown and the filling is bubbling.
