Ingredients

Scale

Main Ingredients

  • 3 cups cooked chicken, shredded or diced
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups shredded cheddar cheese, divided

Topping

  • 1 1/2 cups crushed buttered crackers or breadcrumbs
  • 4 tbsp butter, melted

Seasonings

  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Chicken: Start by cooking and shredding your chicken, or shred a rotisserie chicken. Ensure it is tender and ready to absorb all the creamy flavors.
  2. Mix the Creamy Base: In a large bowl, combine the softened cream cheese, sour cream, and canned cream of chicken soup until the mixture is smooth. Stir in onion powder, garlic powder, salt, and pepper to create a flavorful sauce.
  3. Combine Chicken and Cheese: Add the shredded chicken and half of the shredded cheddar cheese to the creamy mixture. Stir gently to coat everything evenly.
  4. Transfer to Baking Dish: Pour the chicken mixture into a greased baking dish, spreading it out evenly to ensure perfect cooking.
  5. Prepare the Topping: In a small bowl, mix crushed crackers or breadcrumbs with melted butter and the remaining cheddar cheese. Sprinkle this mixture generously over the casserole to form a crispy, golden topping.
  6. Bake Until Golden: Bake in a preheated oven at 350°F (175°C) for 30-35 minutes, or until the topping is golden brown and the casserole is bubbling around the edges.

Notes

  • Use room temperature cream cheese to ensure smooth mixing without lumps.
  • Do not overmix the topping to keep it loose and crunchy.
  • Choose quality chicken such as freshly cooked or rotisserie for the best flavor.
  • Let the casserole rest for 5-10 minutes after baking to set and enhance flavor blending.
  • Customize the cheese by mixing in two or three types like mozzarella or pepper jack for added complexity.
