Ingredients

Scale

Main Ingredients

  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 1 cup breadcrumbs (or gluten-free breadcrumbs for gluten-free option)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/4 cup milk
  • 1/4 cup ketchup or tomato sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 to 1 1/2 cups shredded cheddar cheese (sharp or mild)

Optional Herbs and Add-ins

  • 1 tbsp chopped fresh parsley or thyme (optional)
  • Chili flakes, smoked paprika, or cayenne (to taste)
  • Finely diced bell peppers, mushrooms, or shredded carrots (optional)

Instructions

  1. Preheat oven and prepare the pan: Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease a metal loaf pan to prevent sticking.
  2. Combine the meatloaf mixture: In a large bowl, mix ground beef, breadcrumbs, finely chopped onion and garlic, egg, milk, ketchup, Worcestershire sauce, salt, pepper, and optional herbs. Use your hands or a spoon to blend until just combined; avoid overmixing to prevent a dense meatloaf.
  3. Shape and place in the pan: Transfer the mixture into the prepared loaf pan. Press it down evenly and shape it into a neat loaf for uniform cooking.
  4. Bake partially then add cheddar cheese: Bake in the preheated oven for about 45 minutes to cook through and develop a crust.
  5. Add the cheddar cheese topping: Remove the meatloaf from the oven and generously sprinkle shredded cheddar cheese over the top. Return to the oven and bake uncovered for another 10 to 15 minutes until the cheese melts, bubbles, and turns golden brown.
  6. Let it rest before slicing: After removing from the oven, allow the meatloaf to rest for 10 minutes. This locks in the juices, ensuring each slice stays moist and flavorful when served.

Notes

  • Don’t overwork the meat to keep the texture tender.
  • Use sharp cheddar cheese for better melt and tanginess.
  • Rest the meatloaf after baking to help slices hold together.
  • Check doneness with a thermometer; internal temperature should reach 160°F.
  • For extra cheesiness, add cheddar inside the mixture or sprinkle more on top before serving.
