Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper. Heat olive oil in a hot skillet over medium-high heat and sear the chicken until golden brown on both sides and cooked through, about 5-7 minutes per side depending on thickness. Remove from skillet and let rest. Once rested, slice into bite-sized pieces.
  2. Make the Creamy Sauce: Using the same skillet, sauté minced garlic until fragrant, about 30 seconds to 1 minute. Add chopped sun-dried tomatoes, chicken broth, and heavy cream. Simmer gently, stirring occasionally, until the sauce thickens slightly, about 5 minutes. Stir in freshly grated Parmesan cheese until melted and smooth.
  3. Cook the Pasta: Meanwhile, bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain, reserving about 1/4 cup of pasta water.
  4. Combine and Finish: Add the sliced chicken back into the sauce and toss to combine. Add the cooked pasta and gently mix everything to coat evenly. If the sauce is too thick, add reserved pasta water a little at a time to reach desired consistency. Heat through for 1-2 minutes.
