Ingredients

Scale

Main Ingredients

  • 2 cups frozen shredded or diced hashbrowns, thawed and drained
  • 1 pound ground sausage
  • 1 cup shredded cheddar or mozzarella cheese
  • 2 large cold eggs
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt, to taste
  • Ground black pepper, to taste

Optional Ingredients

  • 2 tablespoons fresh parsley, chopped (for garnish and flavor)

Instructions

  1. Cook the Sausage: In a skillet over medium heat, cook the ground sausage until browned and no longer pink, breaking it up as it cooks. Drain excess fat and set aside to cool slightly.
  2. Prepare the Hashbrowns: If using frozen hashbrowns, thaw completely and squeeze out excess moisture using a clean kitchen towel to ensure crispy bites. If using fresh potatoes, shred finely and remove as much moisture as possible.
  3. Mix Ingredients: In a large bowl, combine the cooked sausage, prepared hashbrowns, shredded cheese, cold eggs, onion powder, garlic powder, salt, and pepper. Mix gently until all ingredients are evenly distributed.
  4. Form the Bites: Using your hands or a small scoop, shape the mixture into bite-sized balls or mini patties, pressing firmly to hold together but not too compacted to keep them tender.
  5. Bake Until Golden: Place the formed bites on a greased or parchment-lined baking sheet. Bake in a preheated oven at 400°F (200°C) for 20-25 minutes, flipping halfway through, until the bites are golden and crispy on the edges.
  6. Cool and Store: Allow the bites to cool completely before transferring them to an airtight container if making ahead for later use.

Notes

  • Drain excess moisture from hashbrowns thoroughly to prevent soggy bites and ensure crispiness.
  • Using cold eggs helps the mixture to bind better, especially when preparing ahead.
  • Do not overpack the bites; gently form them to stay tender yet hold shape during baking.
  • Flip the bites halfway through baking for even golden crispness on all sides.
  • Let the bites cool completely before storing to avoid condensation and sogginess.
