Ingredients

Scale

Main Ingredients

  • 1 lb lean ground beef
  • 2 tbsp taco seasoning (chili powder, cumin, garlic powder, paprika blend)
  • 1/4 cup water
  • 1 cup refried beans
  • 2 cups crushed tortilla chips (gluten-free if needed)
  • 2 cups shredded Mexican blend or cheddar cheese
  • 1/2 cup salsa

Optional Toppings

  • Sour cream, for serving
  • Diced avocado
  • Chopped fresh cilantro
  • Sliced jalapeños

Instructions

  1. Prepare the Beef Mixture: Brown the lean ground beef in a large skillet over medium heat until fully cooked. Drain excess fat, then stir in taco seasoning and 1/4 cup water. Simmer until the mixture thickens and is fragrant, creating a flavorful base.
  2. Layer the Ingredients: Grease a casserole dish. Spread half of the refried beans evenly over the bottom. Add a layer of half the crushed tortilla chips, then spread the seasoned beef mixture over that. Sprinkle half of the shredded cheese on top. Repeat the layers with the remaining refried beans, chips, beef, and finish with the rest of the cheese on top.
  3. Bake to Perfection: Preheat the oven to 375°F (190°C). Place the casserole dish in the oven and bake for 20-25 minutes until the cheese is fully melted, bubbly, and golden brown.
  4. Add Fresh Toppings: Remove from oven and let the bake cool slightly. Add optional garnishes such as chopped cilantro, sliced jalapeños, diced avocado, and a dollop of sour cream to enhance freshness and flavor before serving.

Notes

  • Use freshly shredded cheese for better melting and creamier texture.
  • Keep cooked ground beef chunky instead of mashed for improved texture.
  • Distribute tortilla chips evenly between layers to maintain crunch without them becoming soggy quickly.
  • Season generously with taco seasoning for bold, unforgettable flavors.
  • Allow the bake to rest 5-10 minutes after baking to set and slice cleanly.
