Ingredients

Scale

Brownie Base

  • 6 oz good-quality dark chocolate
  • 1/2 cup unsalted butter (1 stick)
  • 3/4 cup granulated sugar
  • 3/4 cup all-purpose flour (or gluten-free all-purpose flour for gluten-free option)
  • 2 large eggs (room temperature)
  • 2 tbsp cocoa powder
  • 1 tsp vanilla extract
  • A pinch of salt

Chocolate Mousse

  • 4 oz dark chocolate
  • 1 cup heavy cream (cold)

Instructions

  1. Prepare the Brownie Base: Melt the dark chocolate and unsalted butter in a heatproof bowl over simmering water or gently in the microwave, stirring until smooth. Stir in the sugar until fully dissolved. Whisk in the eggs one at a time, followed by the vanilla extract. Gently fold in the flour, cocoa powder, and salt until fully incorporated. Pour the brownie batter into a greased or parchment-lined 9×9 inch baking pan. Bake at 350°F (175°C) for 20-25 minutes or until a toothpick inserted near the center comes out with a few moist crumbs. Let it cool completely.
  2. Whip the Chocolate Mousse: While the brownie cools, melt the additional dark chocolate and allow it to cool slightly. In a separate chilled bowl, whip the cold heavy cream until soft peaks form. Slowly fold the melted chocolate into the whipped cream, mixing gently to keep the texture light and fluffy.
  3. Assemble the Layers: Once the brownie base is fully cooled, spread the chocolate mousse evenly over the top using a spatula. Smooth the mousse carefully, allowing natural waves for a beautiful finish. Refrigerate the layered dessert for at least 2-3 hours to set the mousse and meld flavors.
  4. Serve and Enjoy: Before serving, optionally dust the top with cocoa powder or shaved chocolate. Cut into squares with a sharp knife, wiping clean between cuts for neat edges. Serve chilled, allowing to sit at room temperature for a few minutes to enhance creaminess and flavor.

Notes

  • Bring eggs to room temperature before mixing for a smoother batter and better rise.
  • Keep heavy cream and mixing bowl cold before whipping for perfect mousse texture.
  • Fold the chocolate into the mousse gently to maintain its airy lightness.
  • Use high-quality chocolate for the best flavor.
  • Allow adequate chilling time for the mousse to set nicely.
