Ingredients

Scale

Fruits

  • 3 ripe bananas (heavily speckled)
  • 1 cup crushed pineapple, well drained

Dry Ingredients

  • 2 cups all-purpose flour (or gluten-free flour blend for gluten-free option)
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup sugar

Wet Ingredients

  • 2 large eggs, room temperature
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

Optional Additions

  • 1/2 cup chopped nuts (pecans, walnuts, or almonds)
  • 1/2 cup shredded coconut
  • Additional spices such as cloves or ginger (to taste)
  • Cream cheese frosting or glaze for topping

Instructions

  1. Prepare Your Ingredients: Preheat your oven to 350°F (175°C) and grease your bread pans. Mash the ripe bananas thoroughly and drain the crushed pineapple well. Measure and have all other ingredients ready for mixing.
  2. Mix Dry and Wet Ingredients Separately: In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, salt, and any additional spices if using. In a larger bowl, beat together the sugar, eggs, vegetable oil, and vanilla extract until smooth. Fold in the mashed bananas and crushed pineapple gently into the wet mixture.
  3. Combine Everything Gently: Slowly add the dry ingredient mixture to the wet ingredients, folding carefully until just combined. Avoid overmixing to keep the bread tender. If adding nuts or coconut, fold them in last.
  4. Bake to Perfection: Divide the batter evenly between the prepared pans and smooth the tops. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  5. Cool and Enjoy: Let the bread cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely. This helps prevent sogginess and allows flavors to meld before slicing and serving.

Notes

  • Use heavily speckled bananas for maximum sweetness and moisture.
  • Drain pineapple thoroughly to avoid soggy bread.
  • Fold ingredients gently to prevent dense bread.
  • Ensure eggs and other ingredients are at room temperature for smooth batter.
  • Use fresh cinnamon and nutmeg for the best spice flavor.
