Ingredients

Dry Ingredients

  • Almond Flour: Finely ground, quantity – 1 cup (120g)
  • Powdered Sugar: Quantity – 1 ¾ cups (210g)

Meringue

  • Egg Whites: 3 large, aged
  • Granulated Sugar: ½ cup (100g)
  • Food Coloring: As desired (gel or powder recommended)

Filling Options

  • Buttercream, Ganache, or Jam: Approximately ½ cup total for filling
  • Optional Variations: Chocolate hazelnut spread, raspberry jam, vegan dairy-free filling, rosewater buttercream, or matcha powder for shells

Instructions

  1. Prepare Your Ingredients: Measure all ingredients precisely. Sift almond flour and powdered sugar together twice to ensure a smooth, lump-free batter.
  2. Whip the Egg Whites: Beat egg whites on medium speed until foamy. Gradually add granulated sugar while increasing speed. Continue beating until stiff, glossy peaks form.
  3. Fold in Dry Ingredients: Gently fold the sifted almond flour and powdered sugar mix into the meringue. Incorporate carefully until the batter flows like lava but isn’t too runny.
  4. Add Color and Shape Shells: Mix in chosen food coloring. Transfer batter to a piping bag fitted with a heart-shaped nozzle or round tip. Pipe heart shapes onto parchment-lined baking sheets.
  5. Rest the Macarons: Let piped shapes rest at room temperature for 30-60 minutes until a dry skin forms on top, preventing cracking during baking.
  6. Bake: Preheat oven to 300°F (150°C). Bake macarons for 12-15 minutes, rotating halfway through for even cooking. Shells should be firm and lift easily off parchment.
  7. Assemble: Once cooled, pipe filling onto one shell. Sandwich with another, pressing gently but firmly to avoid cracking.

Notes

  • Use aged egg whites for more stable meringue and better volume.
  • Sift dry ingredients multiple times to avoid lumps for smooth shells.
  • Do not skip resting stage; forming a skin is crucial to get crisp shells and perfect feet.
  • Check oven temperature with a thermometer to ensure consistent and even baking.
  • Apply fillings at room temperature once shells are fully cooled to prevent melting or sogginess.
