Ingredients

Scale

Main Ingredients

  • 34 fresh Hatch chiles (roasted, peeled, seeded, and finely chopped)
  • 8 oz cream cheese (softened)
  • 1/2 cup sour cream
  • 1 cup sharp cheddar cheese (shredded)
  • 1 cup Monterey Jack cheese (shredded)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Prepare the Hatch Chiles: Roast the Hatch chiles under a broiler or on a grill until their skins blister and blacken. Place them in a covered bowl to steam for 10 minutes, then peel off the skins, remove seeds, and finely chop the chiles to release their smoky flavor.
  2. Combine the Cream Cheese and Dairy: In a mixing bowl, soften the cream cheese and stir in the sour cream until the mixture is smooth and creamy, forming the base of the dip.
  3. Add the Cheeses: Mix in the shredded sharp cheddar and Monterey Jack cheeses with the cream cheese blend, ensuring they are well incorporated for a gooey, stretchy consistency.
  4. Season the Dip: Sprinkle in garlic powder, onion powder, salt, and pepper. Taste and adjust the seasoning as needed to perfectly balance the flavors.
  5. Fold in the Chiles and Heat: Gently stir the chopped Hatch chiles into the cheese mixture. Transfer the dip to an oven-safe dish and bake at 350°F (175°C) for about 20 minutes or until bubbly and golden on top.

Notes

  • Use fresh Hatch chiles in season for the most authentic flavor.
  • Steaming the roasted chiles in a covered bowl helps with peeling the skin easily.
  • Don’t skip the sour cream; it balances richness and softens the dip’s texture.
  • Sharp cheddar cheese adds a flavor punch that complements the spice.
  • Serve the dip warm to keep the cheese melty and inviting.
  • Adjust heat by varying the number of Hatch chiles or adding jalapeños or cayenne pepper for extra spice.
