  • 5 tablespoons (70g) unsalted butter, melted

Instructions

  1. Prepare the Crust: Mix the graham cracker crumbs and melted butter together until combined. Firmly press the mixture into the bottoms of a mini muffin tin lined with paper liners to form uniform crusts. Chill the crusts in the refrigerator while preparing the filling.
  2. Make the Green Cheesecake Filling: Beat the softened cream cheese and sugar until smooth and creamy. Add eggs one at a time, mixing well after each addition. Stir in the sour cream and vanilla extract until fully incorporated. Finally, mix in green food coloring until the filling reaches the iconic Grinch green shade.
  3. Bake the Mini Cheesecakes: Pour the green cheesecake filling over the chilled crusts, filling each muffin cup almost to the top. Bake in a preheated oven at 325°F (163°C) for 15-18 minutes, or until the centers are set but still slightly jiggly.
