Ingredients

Scale

Shrimp and Skewers

  • 1 pound large shrimp, peeled and deveined
  • Wooden or metal skewers (if wooden, soak in water for 30 minutes)

Marinade and Sauce

  • 1/4 cup freshly squeezed lemon juice (about 12 lemons)
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons capers, drained
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (plus extra for garnish)

Instructions

  1. Prepare the marinade: In a bowl, whisk together fresh lemon juice, melted butter, olive oil, minced garlic, capers, salt, and pepper until fully combined. This zesty mixture will tenderize and flavor the shrimp.
  2. Marinate the shrimp: Place the peeled and deveined shrimp in the bowl with the marinade, tossing gently to coat. Let them sit for 15 to 20 minutes at room temperature, but not longer to avoid cooking the shrimp with the acid.
  3. Thread shrimp onto skewers: Thread the marinated shrimp evenly onto wooden or metal skewers, ensuring consistent spacing for even grilling and easy flipping.
  4. Fire up the grill: Preheat your grill to medium-high heat and lightly oil the grates. Place the shrimp skewers directly onto the grill and cook for about 2-3 minutes per side, until the shrimp turn pink and have grill marks.
  5. Finish with fresh parsley and sauce: Remove the shrimp from the grill and immediately brush with some reserved marinade or extra lemon butter. Sprinkle chopped fresh parsley over the top for a fragrant and colorful finish before serving.

Notes

  • Use fresh or properly thawed shrimp for best texture and flavor.
  • Do not over-marinate shrimp to avoid mushy texture caused by lemon acid.
  • If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
  • Preheat grill to medium-high heat to lock in juices and create nice char marks.
  • Watch cooking time carefully; shrimp cook quickly and should be removed as soon as they turn pink and opaque.
  • Reserve some marinade before adding shrimp for basting after grilling to enhance flavor.
