Instructions

  1. Prepare the Strawberry Balsamic Glaze: Combine chopped fresh strawberries, balsamic vinegar, and honey in a small saucepan. Simmer over medium heat, stirring frequently, until the mixture thickens into a luscious glaze. Remove from heat and let cool slightly.
  2. Cook the Orzo Salad: Boil the orzo pasta according to package instructions until al dente. Drain and rinse with cold water to stop cooking. Toss the orzo with diced cucumber, chopped fresh basil, crumbled ricotta salata, olive oil, salt, and black pepper until well combined.
  3. Grill the Chicken: Season the chicken breasts with salt, pepper, and olive oil. Grill over medium-high heat for about 6-7 minutes per side until cooked through. During the last few minutes, baste the chicken with the strawberry balsamic glaze to create a sticky, fruity finish. Remove from grill and let rest for a few minutes.
  4. Assemble the Dish: Slice the grilled chicken and plate alongside a generous scoop of the orzo salad. Drizzle any remaining strawberry balsamic glaze over the chicken for enhanced flavor.
