Instructions

  1. Prepare the Sponge Cake: Whisk the eggs and sugar together until the mixture is thick, pale, and fluffy. Gently sift and fold in the flour to maintain a light batter. Pour the mixture onto a lined baking sheet and bake at 180°C (350°F) for about 10-12 minutes or until the sponge is springy to the touch. This ensures it will roll smoothly without cracking.
  2. Brew and Cool the Espresso: Prepare strong coffee or espresso and allow it to cool completely. This cooled coffee will be used to soak the sponge without making it soggy.
  3. Mix the Mascarpone Cream: Whip the heavy cream to soft peaks. In a separate bowl, combine mascarpone cheese, sugar, and vanilla extract until smooth. Gently fold the whipped cream into the mascarpone mixture to create a light, creamy filling.
  4. Assemble the Layers: While still warm, roll the sponge cake with a clean kitchen towel to form the log shape and allow it to set. Unroll carefully, brush generously but lightly with the cooled espresso, then spread an even layer of the mascarpone cream filling. Reroll the sponge into a firm log.
  5. Decorate and Chill: Dust the exterior of the rolled cake with cocoa powder. Add chocolate shavings or curls and festive decorations if desired. Refrigerate the cake for several hours or overnight to allow the flavors to meld and the cream to set properly.
