Chicken & Marinade

  • 1 tsp chili powder (adjust to taste)
  • Salt, to taste

Sauce

  • 2 tbsp oil
  • 1 tbsp ghee
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 200g tomato purée
  • 150ml heavy cream
  • Salt and pepper, to taste

Garnish

  • Fresh cilantro leaves, chopped

Instructions

  1. Marinate the Chicken: Combine yogurt, minced garlic, grated ginger, lemon juice, garam masala, turmeric, chili powder, and salt in a bowl. Add the chicken thighs and coat thoroughly. Cover and marinate for at least 1 hour, preferably overnight, to tenderize the chicken and infuse bold spices.
  2. Cook the Chicken: Heat oil and ghee in a skillet over medium-high heat. Remove chicken from marinade, shaking off excess, and sear on all sides until browned but not fully cooked through. Remove and set aside to retain juices and develop flavor.
  3. Prepare the Sauce Base: In the same skillet, sauté finely chopped onions until golden and fragrant. Add minced garlic and grated ginger, cooking briefly until aromatic. Stir in cumin and coriander powders, then add tomato purée. Simmer gently to deepen flavor and color.
  4. Combine Chicken and Sauce: Return the seared chicken to the pan, coating it with the sauce. Pour in the heavy cream and simmer gently until the chicken finishes cooking and the sauce thickens, allowing flavors to meld.
  5. Garnish and Serve: Season with salt and pepper to taste. Sprinkle chopped fresh cilantro over the dish. Serve immediately with basmati rice or naan bread for a complete meal.
