Instructions

  2. Whisk Egg Yolks and Spices: In a separate bowl, beat the egg yolks together with the sugar, molasses, ground ginger, cinnamon, and nutmeg until smooth and slightly pale. This mixture is the flavor foundation for your mousse.
  3. Combine Coffee and Egg Mixtures: Slowly pour the warm coffee-gelatin mixture into the egg yolk mixture while whisking to prevent curdling. This step integrates the coffee flavor evenly throughout the mousse.
  4. Whip the Cream: Whip the heavy cream and vanilla extract to soft peaks. Carefully fold the whipped cream into the coffee-egg mixture, keeping as much air as possible for a delicate texture.
  5. Mold the Mousse Domes: Pour the mousse into silicone dome molds. Smooth the tops with a spatula, then chill in the refrigerator for at least 4 hours or until set. Once firm, carefully unmold each dome for serving.
