German Potato Salad

German Potato Salad

This German Potato Salad recipe offers a vibrant, tangy, and warm side dish featuring tender waxy potatoes, crispy bacon, and a flavorful apple cider vinegar-based dressing. Perfectly balancing savory and fresh flavors, it is quick to prepare and ideal for gatherings, barbecue sides, or everyday dinners.

Ingredients

Scale

Potatoes

  • 2 pounds firm waxy potatoes (Yukon Gold or red potatoes)

Bacon and Aromatics

  • 6 slices bacon
  • 1 small onion, thinly sliced
  • 2 tablespoons fresh parsley, chopped

Dressing

  • 1/4 cup apple cider vinegar
  • 1/4 cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1 tablespoon brown sugar or honey
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Cook the Potatoes: Start by boiling the potatoes whole with their skins on until fork-tender but not falling apart, about 15-20 minutes depending on size. Let them cool slightly, then slice into bite-sized pieces.
  2. Prepare the Bacon and Onions: While the potatoes cook, fry the bacon in a large skillet until crispy. Remove and drain on paper towels, keeping the bacon fat in the pan. Sauté the thinly sliced onions in the bacon fat over medium heat until soft and translucent.
  3. Make the Dressing: Add the apple cider vinegar, chicken broth, mustard, and brown sugar to the onions and bacon fat in the pan. Stir and let the mixture simmer gently to combine and reduce slightly, allowing the flavors to meld.
  4. Combine Everything: Place the warm sliced potatoes in a large bowl, crumble the cooked bacon on top, then pour the warm dressing over. Gently toss everything together so the potatoes absorb the tangy sauce evenly.
  5. Finish with Fresh Parsley: Sprinkle chopped fresh parsley over the salad for a pop of color and herbal freshness just before serving.

Notes

  • Use waxy potatoes that hold their shape to avoid a mushy salad.
  • Serve the salad warm or at room temperature for best flavor absorption.
  • Adjust vinegar amounts to taste; start with less and add more if desired.
  • Choose quality bacon for a better flavor balance.
  • Allow the salad to rest for 15 minutes before serving to blend the flavors well.
