Ingredients

Scale

Steak and Protein

  • 8 oz sirloin or ribeye steak, thinly sliced

Pasta

  • 8 oz fettuccine, linguine, or spaghetti pasta

Sauce

  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons butter

Seasonings and Garnish

  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup fresh parsley or basil, chopped
  • 1/4 cup Parmesan cheese, freshly grated
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Prepare the Steak: Season the steak generously with salt and black pepper. Heat a skillet over medium-high heat and add olive oil. Cook the steak for 3-4 minutes per side, depending on thickness and desired doneness. Remove from heat and let rest before slicing thinly against the grain.
  2. Cook the Pasta: Bring a pot of salted water to a boil and cook the pasta until al dente according to package instructions. Reserve 1 cup of pasta water, then drain the pasta.
  3. Sauté the Garlic: In the same skillet, reduce heat to medium, add butter and a bit more olive oil. Add minced garlic and cook for 1-2 minutes until fragrant and golden, taking care not to burn it.
  4. Combine and Finish the Dish: Add the drained pasta to the skillet with the garlic butter sauce. Toss to coat evenly, gradually adding reserved pasta water to reach the desired sauce consistency. Fold in the sliced steak, sprinkle in the fresh herbs, and finish with freshly grated Parmesan cheese. Add crushed red pepper flakes if desired.
  5. Serve Hot: Plate the Garlic Steak Pasta immediately. Garnish with additional parsley or basil and a light dusting of Parmesan cheese. Serve while warm and aromatic.

Notes

  • Rest your steak before slicing to keep it tender and juicy.
  • Cook the garlic just until fragrant to avoid bitterness.
  • Use reserved pasta water to bind the sauce smoothly with the pasta.
  • Slice steak thinly to allow it to warm quickly and blend well.
  • Add fresh herbs at the end to maintain their bright color and fresh flavor.
