Mashed Potatoes

  • 2 lbs russet potatoes, peeled and cut into chunks
  • 1/2 cup milk or cream, warmed
  • 3 tbsp butter
  • Salt and pepper, to taste

Instructions

  1. Prepare the Potatoes: Peel and cut the russet potatoes into even chunks. Place them in a pot of salted water and bring to a boil. Cook until the potatoes are tender, about 15 minutes. Drain well and return them to the pot.
  2. Mash the Potatoes: Add warm milk or cream, butter, salt, and pepper to the cooked potatoes. Mash until smooth and creamy, adjusting the amount of liquid as needed to reach your preferred consistency. Set aside and keep warm.
  3. Cook the Garlic Shrimp: In a large skillet, melt the butter over medium heat. Add the freshly minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp, season with salt and pepper, and cook for 2-3 minutes on each side until the shrimp turn pink and opaque.
  4. Finish with Lemon and Parsley: Squeeze fresh lemon juice over the cooked shrimp and sprinkle with chopped parsley. Stir gently to combine and let the flavors meld.
