Garlic Parmesan Chicken and Potatoes

Garlic Parmesan Chicken and Potatoes is an easy, one-pan dinner featuring tender chicken thighs or breasts roasted alongside baby potatoes in a savory garlic Parmesan sauce. This dish offers a perfect balance of comfort and flavor with a crispy golden crust, ideal for busy weeknights and family meals.

Ingredients

Scale

Chicken

  • 46 chicken thighs or breasts (bone-in or boneless, depending on preference)

Potatoes

  • 1.5 pounds baby potatoes, halved if large

Garlic Parmesan Sauce & Seasonings

  • 45 garlic cloves, minced
  • 1 cup grated Parmesan cheese
  • 3 tablespoons olive oil, divided
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme blend)
  • Salt, to taste
  • Black pepper, to taste

Garnish (optional)

  • Fresh parsley, chopped

Instructions

  1. Prepare the Ingredients: Preheat the oven to 400°F (200°C). Wash the baby potatoes and cut larger ones in half to ensure even roasting. Mince the garlic and measure the Parmesan cheese and dried herbs.
  2. Season the Chicken and Potatoes: In a large bowl, toss the potato halves with 1.5 tablespoons olive oil, half the minced garlic, dried Italian herbs, salt, and pepper until evenly coated. In another bowl (or the same one if preferred), coat the chicken pieces with the remaining olive oil, minced garlic, salt, pepper, and a sprinkle of dried Italian herbs to build flavor.
  3. Arrange in the Baking Dish: Spread the seasoned potatoes evenly in a large baking dish or sheet pan. Nestle the chicken pieces skin side up on top of the potatoes, leaving space between pieces to allow heat circulation and skin crisping.
  4. Add Parmesan and Bake: Sprinkle grated Parmesan cheese generously over the chicken and potatoes. Bake for 35-45 minutes until the chicken reaches an internal temperature of 165°F (74°C), the potatoes are fork-tender, and the cheese forms a golden, savory crust.
  5. Finish and Serve: Remove from oven and let rest for a few minutes to keep the chicken juicy. Garnish with freshly chopped parsley if desired. Serve warm with your favorite sides or a simple salad.

Notes

  • Use room temperature chicken to ensure even cooking and prevent undercooked centers.
  • Pat chicken dry before seasoning to help crisp the skin.
  • Do not overcrowd the pan; leave space between chicken and potatoes for proper roasting and browning.
  • Fresh minced garlic provides more vibrant flavor than garlic powder.
  • Use a meat thermometer to confirm chicken reaches 165°F (74°C) before serving.
  • Let the dish rest after baking to keep chicken juicy.
