Garlic Mozzarella Biscuit Bombs are bite-sized, cheesy snacks featuring gooey mozzarella cheese wrapped in soft, buttery biscuit dough infused with fresh garlic and Italian herbs. Perfect as an appetizer, party snack, or comfort food, these easy-to-make bombs offer a golden, crispy exterior with a melty, flavorful center, ready in under 30 minutes.

Ingredients

Scale

Biscuit Dough

  • Store-bought or homemade biscuit dough (enough for 8-12 biscuits)

Cheese

  • Fresh mozzarella cheese, shredded or small cubes (about 1 to 1½ cups)
  • Parmesan cheese (optional, for sprinkling)

Garlic Butter

  • 4 tablespoons butter, melted
  • 23 cloves garlic, freshly minced
  • 1 teaspoon Italian seasoning
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Biscuit Dough: Preheat your oven to the temperature indicated on your biscuit dough package (typically 375-400°F). Line a baking tray with parchment paper. Separate the biscuit dough into individual pieces ready for stuffing.
  2. Mix Garlic Butter: Melt the butter and combine with freshly minced garlic, Italian seasoning, salt, and pepper. This garlic butter will be brushed on top and can be used to coat your hands while shaping the biscuits to add flavor and prevent sticking.
  3. Stuff the Biscuits: Flatten each biscuit piece into a small circle about 3-4 inches in diameter. Place a chunk or spoonful of mozzarella cheese in the center, then fold the dough carefully around the cheese, pinching the edges tightly to seal each biscuit “bomb” completely.
  4. Brush with Garlic Butter: Place each stuffed biscuit seam side down on the lined baking sheet. Generously brush the tops with the garlic butter mixture to achieve a shiny, flavorful crust after baking.
  5. Bake to Perfection: Bake in the preheated oven according to the biscuit package instructions or until the exterior turns golden brown and the cheese inside is melted and gooey, about 12-18 minutes. Allow to cool slightly before serving to avoid burns from hot cheese.

Notes

  • Seal the biscuit edges tightly to prevent cheese leakage during baking.
  • Use freshly minced garlic for the best, most vibrant flavor.
  • Do not overfill the biscuits with cheese to avoid bursting.
  • Brush the garlic butter generously for a golden, flavorful crust.
  • Let the biscuit bombs rest a few minutes after baking to allow the cheese to set slightly and prevent burns.
