Ingredients

Scale

Chicken and Marinade

  • 2 boneless chicken breasts
  • 3 fresh garlic cloves, minced
  • 2 tablespoons fresh herbs (thyme, rosemary, parsley), chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt, to taste
  • Freshly ground black pepper, to taste

Vegetables

  • 4 medium carrots, peeled and cut into sticks or rounds
  • 1 tablespoon olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon chopped fresh herbs (optional, for tossing carrots)

Instructions

  1. Prepare the Chicken Marinade: Mince the fresh garlic and finely chop the herbs. In a bowl, combine garlic, herbs, olive oil, lemon juice, salt, and pepper. Add the chicken breasts and coat them thoroughly. Marinate for at least 15 minutes to allow flavors to infuse deeply.
  2. Prep the Carrots: Peel and cut the carrots into uniform sticks or rounds. Toss them with olive oil, salt, pepper, and a sprinkle of chopped herbs to ensure even roasting and added aroma.
  3. Roast Everything Together: Arrange the marinated chicken and carrots on a baking sheet or roasting pan. Bake at 400°F (200°C) for 20-25 minutes, turning the carrots halfway through. Ensure the chicken reaches an internal temperature of 165°F (74°C) and is golden on the outside.
  4. Rest and Serve: Let the chicken rest for 5 minutes before slicing to retain moisture. Serve the chicken alongside roasted carrots, drizzling any pan juices over the top for extra flavor.

Notes

  • Choose evenly sized carrots to ensure consistent roasting and texture.
  • Do not skip resting the chicken to keep it juicy and tender.
  • Use fresh herbs for a brighter, more robust flavor.
  • Marinate longer, up to 30 minutes or overnight, to intensify the garlic-herb infusion.
  • Maintain a high oven temperature to caramelize carrots and crisp chicken skin effectively.
