Ingredients

Scale

Primary Ingredients

  • 4 medium russet potatoes, peeled if desired and diced into small cubes
  • 2 medium yellow onions, sliced
  • 1 pound Italian sausage (spicy or mild), crumbled
  • 2 tablespoons olive oil or butter
  • 3 garlic cloves, minced
  • Salt, to taste
  • Black pepper, to taste

Optional Garnishes and Variations

  • Fresh parsley, chopped (optional)
  • Diced red or green bell peppers (optional)
  • Red pepper flakes or cayenne powder (optional)
  • Fresh spinach or rosemary (optional)
  • Shredded cheddar or mozzarella cheese (optional)

Instructions

  1. Prepare the Potatoes: Peel (if desired) and dice the potatoes into small, even cubes. Rinse them under cold water to remove excess starch, then pat them completely dry to ensure crispiness during frying.
  2. Brown the Sausage: Heat a large skillet over medium heat and add olive oil or butter. Crumble the sausage into the pan and cook for 5-7 minutes until browned and cooked through. Remove the sausage and set aside, keeping the drippings in the skillet.
  3. Cook the Potatoes: Add the diced potatoes to the skillet in a single layer. Allow them to fry undisturbed for several minutes to develop golden, crispy edges, then stir occasionally to cook evenly, about 15 minutes. Season with salt and pepper.
  4. Sauté Onions and Garlic: When potatoes are nearly tender, push them to the side of the pan. Add sliced onions and minced garlic to the empty side and cook for about 5 minutes until onions soften and caramelize.
  5. Combine and Finish: Return the cooked sausage to the skillet and stir everything together. Cook for another 2-3 minutes to blend flavors. Sprinkle fresh parsley on top before serving, if desired.

Notes

  • Use a heavy skillet like cast iron or stainless steel for best crispy results.
  • Dry potatoes fully before cooking to prevent them from steaming and becoming soggy.
  • Do not overcrowd the pan; keep potatoes in a single layer to ensure even browning.
  • Cook sausage separately to achieve a proper brown and avoid overcooking potatoes.
  • Season gradually, tasting near the end to balance flavors.
  • This dish stores well refrigerated for up to 3 days and freezes for up to 2 months.
  • Reheat in a skillet with a little oil for best crispiness or in the oven at 350°F (175°C).
